Through research and conversation with local friends, we realize that wooden objects in Paiwan culture serve significant cultural functions beyond their appearance. From its formality, symbolism and interactivity, the craftsmen deliver a deeper collective spirit of “connection and reconciliation”.For instance the renowned ceremonial drinking cup, a long wood bar with 2-3 cups carved from it known as ragal. It was an important object to solve any conflicts and make alliances of any kind, once two agree to drink together, anything can move forward. It was a common object for ritual and dining purposes. However, as the law system progressed, one of our friends shared: “If you don’t want to communicate these days, court notices are more efficient than traditional ceremonies.”With democratic solutions strengthened in the modern world, it presents an easy and convenient arbitration. On the other hand, it also removed genuine connection between people; and those missing feelings are fundamental elements for building an identity for any cultural collective.In our observation, wooden objects with similar function and quality are often found on food related occasions in Paiwan culture. As food designer Marije Vogelzng said in an interview: “only two who trust each other can dine together.” Thus, we review how design could provide a fresh perspective on the co-creation of “one more plate” project. We invited 3 designers and 4 craftsmen with the initial theme set for “food” and the “potential scenario to adapt the meaning in modern context”. Ragal, typical ceremonial connected drinking cup for Paiwan indigenous community, is known for reconnecting people. With modern interpretation, extracting the essences of significant diamond shape. Opening up the connected typology, each plate is independently crafted. Willingness is the key to reconciliation. The plates are design as a set of four, each plate has side that corresponding to one and another one, It is a poetic respond to welcome anyone who’s willing to make an effort to change the way things 餐具概念： 啟發自典藏文獻圖片中，苑裡婦女排排坐的畫面。呼應了在苑裡由母親們共享、傳遞所串起的工藝文化。麵包籃以非尋常的大小設計，邀請參與者必須傳遞，擴大了「帽作為容器」的想像。而容器外延伸、有生命力的藺草流蘇，在傳遞間，劃過所有人的手間。除近距離看見藺草原型，也在觸覺中留下記憶。主廚說菜： 這是中部地區最好吃的酸種麵包之一；跟國外的酸種麵包最大的不同在於刻意添加了20%的台灣小麥；可看到表面的氣孔大小不一，因為麵糰發酵的時間長達24小時以上，吃了也不用擔心會脹氣。桌面上有兩種醬料，一種是豬油結合梅子味增的抹醬，另外一種是新鮮破布子與芒果熬煮製成的果醬，讓兩種不同類型的醬料，提亮了酸種麵包裡的細膩風味。 <img width="6000" height="4000" 「紋」功能：主餐盤、前菜盤材質：雙色陶土 餐具概念： 三角藺主要生長地為土壤帶為有鹽分、沼澤的地帶。而因為苑裡土壤的加成，在這生長的藺草特別的細緻，析為細絲後，便能編製帽子等講究質感的產品。 取色於苑裡土壤，片裁輕輕壓印，讓苑裡最特色的「網花紋」與土融為一體，長久地在餐桌上保留下來。透過主廚醬料，揭露在參與者面前。主廚說菜： 在阿姨的手中，藺草總能自然延展後，以不同的形狀，蔭罩著人們。 以有機自然的型態做基底，結合Fine-dining常用的鐘罩結構，將煙燻氣味收斂，而在揭露時分釋放。一盅一盅陸續擺置在客人面前，由主廚示範，捏著開口上緣，揭開食物，靜心聞香，開始享用。主廚說菜： 第一次看到藺草的時候，被其三角而中空的型態所驚艷。讓我想到同樣擁有類似結構的油條。鐘罩在我們餐廳之中，時常捕捉著煙燻稻草的氣味沁入其中。這次採用藺草為煙燻物，並在上餐前把握時間，灌入鐘罩之中，讓客人能夠在眼前被冉冉白煙與木質藺香包圍，搭配魚子醬與無花果享用，作為邀請進入藺草故事開場白。 <img width="6000" height="4000" width_o="6000" 「涼」功能：酒杯、茶杯材質：雙色陶土、藺草、3D列印 餐具概念： 現代臺灣人對於藺草最具象的五感記憶，便是在童年夏季，家人拿出草蓆，鋪在床墊上。展開時香氣撲鼻，躺下時溫潤沁涼。將涼爽、解熱的記憶轉譯，濃縮到手中生活慣用的容器，唯有「就口」的碗與杯，具有區分、個人的特質。 雙色土杯，在別上不同的藺紋編後，讓參與者能夠辨識自己的杯子。而手中小巧的蓆草尺度，轉譯了臺灣人熟悉的藺草記憶。主廚說菜： 阿嬤家的草席，是多數人對於藺草的第一記憶。這次的飲品，部分採用了恆器製酒的AMA巨峰葡萄桶陳加烈酒。特別之處在於酒廠依循古法方式堆疊一層葡萄渣一層酒，封存熟成半年後裝瓶。酒感具有記憶中老葡萄酒風味，因而命名為AMA（阿嬤），為時光與傳統所致敬。另拌入採用包種茶菌種發酵的康普茶，降低苦澀，提亮台灣茶特有清香。 <img width="6000" height="4000" 你攝取的食物，真的形塑了我們。多吃一點油，隔天就可能變胖。而人類不僅透過進食建立連結，還擅長用食物表達情感與社會互動，例如:送巧克力傳遞愛意、在節慶中砸番茄狂歡，或用丟雞蛋來表達憤怒。此外，食物更滲透到我們的語言與感知，「苦」情、「酸」民、「辣」妹等詞彙，都是五感經驗的隱喻。 正因為「食」是各文化認同中最廣泛的共通語言，也因為每個人都會吃、都需要吃，隨著飲食產業的發展，用餐成為最愉悅、最可觸及(tangible)、最能分享 (sharable)的經驗。透過食物，我們得以窺探自身文化，萃取集體意識中的行為觀察，將五感體驗轉化為詞彙，透過設計與創作編織成章，使其細微且獨特的 面向進入觀者的視野。 在這堂課中，我們將選擇一種食物作為物件，練習找出他的類型學，並探討其 此次餐食體驗使用計畫的打樣成果，讓原型進入真實使用情境，翻轉過往藺草工藝限制，將工藝走入新的領域！ 藺編，是本土最具豐富感官經驗的工藝之一。 除了已知美麗的編紋與在地的故事脈絡。從植物的取得、 季節曝曬、槌製、編織到最終端的使用，足具辨識度香氣始終縈繞著;色彩，也隨著季節與製程， 漸漸的在眼前變化。而我們實際學習中，在編織的過程，觸覺在手中的鬆與緊， 在一拉一放間，細膩地形塑了最後的作品。 20231201酸柑水晶球食物設計工作坊@或者新州屋&nbsp; Bitter Orange Food Design Workshop 上週末，我們首次新書分享＋食物設計工作坊就獻給新竹第一家百貨或者新州屋我們設計課程的過程中，與或者團隊不斷地尋找在客家飲食文化中，具有食物設計特質的食物。󠀠 九蒸九曬的製程的 ＃酸柑茶，讓我們除了味蕾上體驗甘甜滋味，在認識台灣少見的緊壓茶的過程中，風乾製成與造型到敲碎注水享用，每一個步驟的儀式性，都讓我們測試、轉譯的潛力。󠀠 或者，一直是一個致力於保存與轉譯文化的單位，我們也希望把我們日常的 ＃食物設計思考 注入這次的體驗中。不只是動動手，我們也希望大家打開五感，深深的記憶感受後，解構原本的風味後，跳脫食物就是理所當然的想像，每個人以自己的方式，製作模具，詮釋與酸柑茶產生互動，重新轉譯這個獨特的食材。󠀠當天在大家手忙腳亂之中，充滿了歡笑聲。食物總是不讓我們失望的，帶給我們這麼多歡愉的體驗跟學習。當天還有遠從香港來的朋友，專程來台灣找我們買書，聽到她分享要成為食物設計師的夢想，真的很期待看到大家未來的創作。󠀠󠀠&nbsp; 這次與 或者新州屋 合作的 #酸柑水晶球食物設計工作坊，實現了我們許多⼀直想嘗試的 #⽂化x創新的實驗。在 MY YARD 與 貝殼放大 Backer-Founder 集資團隊⼤⼒相挺下，我們終於有機會將想像落實！󠀠真空成型⼀直是產品設計師的好朋友，不僅能夠協助我們快速打樣、測試外觀、結構。在⾷物設計上，我們的應⽤更多元，甚⾄可以設計、⾃造⼩量產品實驗販售。󠀠我們觀望市⾯上家⽤真空成型機許久，有些使⽤不便需要外接吸塵器，有些過於巨⼤價錢⾼昂。這次 FORMART 🅢 的出現，真的讓我們很開⼼，「你們先來⽤⽤看，合⽤再來談合作」團隊信⼼說道。 󠀠我們實際使⽤經驗來說，機器不僅輕巧，簡約未來的⽩⾊外觀，放在家中也好看不突⺎。真空成型機加熱時，因為完善的排氣設計，常⾒的噪⾳與氣味根本感覺不到。 讓我們真⼼的想要把機器留下來玩。󠀠󠀠#使用介面直覺 #餐飲從業人員也能輕鬆駕馭在與⾙殼放⼤團隊討論時，除了⾃造專⻑的設計師外，像這樣體積迷你、簡單好上手的真空成型機，也希望能夠推廣給更多餐飲從業⼈員使⽤。󠀠畢竟，原型、模具製作對於⼀般餐飲業者來說，實作上還是略嫌⿇煩與苦⼿。這點 FORMART 🅢
